Like many of us, lockdown forced us to slow down, rethink, and experiment. While some were baking sourdough, we were brewing something different. Stuck at home, surrounded by fermentation jars, we had an idea: What if kombucha could be bolder?
We loved the probiotic benefits of kombucha, but it was always too tart, too sour, or too vinegar-forward. We wanted something smoother, livelier, and more refreshing—a drink that delivered both flavor and function. That’s when inspiration struck:
What if we blended the gut-friendly goodness of kombucha with the bold, spicy kick of ginger beer?
And just like that, our tiny kitchen became a brewing lab.
From Lockdown Hobby to Full-Blown Obsession
Days turned into weeks, and weeks into months of fermenting, tweaking, and testing. The kitchen was overflowing with grated ginger, bubbling cultures, and dozens of test batches. We tried different fermenting techniques, adjusted the spice levels, and obsessed over the perfect balance between smoothness and fizz.
After countless late-night taste tests, we finally nailed it—a drink that was:
